Homemade Pumpkin Pancakes
Combine dry ingredients in a bowl:
- 2 cups flour
- 1 tbsp granulated white sugar
- 1 tbsp brown sugar
- 6 tsp baking powder
- 1 tsp salt
- 1 tsp cinnamon
- 1 tsp nutmeg
In a separate bowl, mix together milk, eggs, butter, pumpkin. Mix into dry ingredients until well blended and smooth.
- 1 1/2 cups milk
- 1 cup of canned pumpkin puree
- 4 eggs, lightly beaten
- 1/4 cup of butter melted
Pour onto hot griddle. Cook until you see bubbles on top, then flip.
Serve with confectionary sugar and maple syrup. Enjoy!
