Gooey Blueberry Muffins: a Visual Recipe

Cook Time: 25 Minutes
Ready In: 40 Minutes
Servings: 8 large muffins + 2 spoonfuls of delicious batter mmmm!

Ingredients:

1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg (and for the glazed top, 1 more egg to make egg whites)
1/3 cup milk
1 cup fresh blueberries
1/2 cup white sugar

Directions

Preheat oven to 400 degrees F (200 degrees C).
Line baking pan with muffin liners.
Wash and dry 1 cup of fresh blueberries.
Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder.
Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup.
Mix this with flour mixture.
Fold in blueberries.
Fill muffin cups right to the top.
Mix a teaspoon of sugar and egg whites (from 1 egg) in a bowl.
When there are 2 minutes left on the oven timer, use a baking brush to paint the muffins with this glaze.
Bake for 20 in the preheated oven, or until done.

Strain and dry 1 cup of fresh blueberries

Pour water into unused muffin holes
Bake for 20 minutes at 400 degrees F
At 2 minutes remaining, mix egg white and sugar for your glaze
Let cool in oven for a minute or 2

    Why is there an additional 1/3 of flour on recipe?

      Crystal, thank you for asking! There shouldn’t be an extra 1/3 cup for flour. The original recipe calls for a crumb topping, and when I copied and pasted the recipe, I removed all but one of the few additional ingredients to make the crumb topping. I will update it now. Enjoy!]
